    Crustless Pumpkin Pie

     

    Carla was kind enough to share this recipe with all of us. Just in time for Thanksgiving!

    Crustless Pumpkin Pie


    1 can pumpkin (398 ml)
    1/2 cup sugar
    1/2 tsp salt
    1/2 tsp ginger
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/4 tsp cloves
    2 slightly beaten eggs
    1 can evaporated milk (298 ml, shaken well)
    12 tbsp light frozen whipped topping
    In large bowl, mix pumpkin, sugar, salt and spices. Stir in the eggs until well mixed. Add the evaporated milk and stir until smooth. Pour into a lightly greased 9 inch pie plate and bake at 400 degrees for about 40 minutes, or until knife inserted near centre of pie comes out clean. Top each slice with 2 tbsp of whipped topping. Makes 6 servings.

    I am working all day Thursday so I won't have totals up until Thursday evening (assuming that my kids go to bed on time and nothing crazy happens!).

    Healthy Snacks

    Last week I asked you to share some healthy snacks. Here is what some others are eating:

    Sliced apple with 1 TBSP. peanutbutter, even sprinkle some cinnamon on too!

    I like the V8 vegetable juice in the 156 ml it is 40 calories and 1 serving of vegetable and when I am hungry it is filling.

    I like the weight watchers lemon bars, they are 1 point I freeze them and eat it frozen, yummy!!

    If I am craving sweets I find a small box of kids raisins does the trick! Healthy and sweet (at least healthier then cake or cookies!!)

    I toast 1/4 cup slivered almonds. They are high in fat but also high in protein. I find them very filling and satisfying.

    What Others Are Doing……

     

    Last week I asked what you all were doing to lose weight. Here are some of the answers that came in. I hope I got them all. I use gmail so sometimes it stacks emails and I miss something, but I think I got everything.

    • W are pasta people, and I have found that we eat smaller helpings when we eat wholewheat pasta, a small change (and the price has really come down) for no change noticed by the pickiest children in the world - who smother it in ketchup anyway.
    • Instead of bringing a lawn chair to the kids sports practise I walk around the field. With no where to sit it makes it easier to walk around and exercise.
    • So far what's worked for me is portion control and trying to be more aware of how many "random bites" I take throughout the day. I try not to finish off the kids' food. I am also doing a workout video every day (ok i missed 1). It's called "30 Day Shred". The video is only 20 minutes but it's intense. I'm getting over some of the initial soreness and have lost about 6 lbs. Plus I have more energy overall.
    • One thing that I started doing last Wednesday was keeping track of what I'm eating on a website. The website I'm using is nutridiary.com.  You can enter your starting weight and all measurements and plug in a goal. It gives you the recommended amount of calories to consume each day. You track your progress and can see it all on a nice little chart.  It also gives you the option of tracking water intake and any exercises you do throughout the day.  I've only been tracking food on there as of yet and it is a bit tedious but it's great to see what you are actually putting into your body and what you should be putting in there. My portions are WAY better since I started doing it. Another thing that's kind of cool is that it tells you what vitamins and nutrients are missing from your diet.
      I've also been making sure to drink at least 3L of water per day and aside from coffee (I don't see me kicking that habit) that's really been the only beverage I've been drinking.
    • I have lost xxx lbs since June 1st on a plan called Maximized Living – it is for health reasons you join this and it puts all your hormonal levels back in balance – amazing program
    • I have been using Dr. Abravanel’s Body Type Diet & Nutrition Plan. I don’t follow it to a T but I find if I eat the food the book suggests and avoid the same I lose weight. To kick start this journey I stayed away from sugar (my bad food) for 3 days. Seems to be what I needed. I like it because it allows you to eat all the things you enjoy, just on a restricted basis and teaches you what foods will give you the most energy. I admit, when I eat what I am supposed to I have way more energy. No coffee needed to keep me going all day.
    • I’ve been walking or biking the kids to school if I am not working.

    Trying to Make the Teams

    Hello Ladies,

    I am in the process of making up the teams. I sent an email out mid-week asking everyone to send me your weight loss goal (10,15,20,25 lbs. etc). I need to know how much you want to lose by the end of December. This will help me to divide the teams more evenly. If you have not sent me your goal THIS WEEK, please do. I am thinking maybe some of you thought you did but actually haven't or I just misplaced it. :)

    We have 23 ladies participating so far! Wow. Just one more week to join up and then I will make up the teams.

    Weigh Ins

    Hello ladies,

    If you are looking for information on what this is all about please see 2 posts down.

    So far I have 15 ladies who said they want to participate. Just waiting for the money to come in to confirm it. Our first weigh in will be on Wednesday, Sept. 1. A few notes about weigh ins.

    -Please weigh in on a digital scale. If you do not have one you can come here to weigh in or use a friends scale.

    -Please be sure to use the same scale each time.

    -Please weigh yourself in the same outfit every time and at the same time. After a shower in your under garmets is best, but if you are weighing in at a friends obviously that won't work! Just be sure to always wear the same thing.

    If you know anyone else who wants to join us they are welcome. We will accept participants up to September 15, 2010. Our second weigh in will be September 22. Obviously the people who join by September 1 will have a bit of an advantage over the late comers but it will all even out in the end.

    If all 15 people join the winner will get $100, those who lose between 4-9% will be enetered into a draw to win $40 (one person will win), those who lose 10% or more will be enetered into a draw to win $40 (one person will win), plus we will work in teams and the teams to lose the most will split a $30 prize. Team prizes will be given out 4 times throughout the game.

    I'll be sending all participants an email on Monday or Tuesday to confirm that you are still wanting to play.

    One last thing, once you join you can quit, but your money will not be refunded. We hope you don't quit though!

    Update....

    So far we have 8 people who say they want to join and a couple more who are thinking about it. YEAH!!

    If we get 12 people we will form teams. Teams will be able to win prizes as well based on total team percentage lost. This way those who only have a bit to lose still have a chance to win.

    If you could add what you hope to lose when you sign-up that would help. This way I can try to even out the teams a bit. Total team weight will also be around the same (as close as possible anyway!) for each team to make it more fair.

    I know you have to tell me your weight. If it makes you feel better I can email you back my weight, it's only fair! :)

    How It Works

    I thought this would be a fun way to lose some weight. I am hoping others are interested. If I get at least 5 people signed up we will go ahead with it. I was talking to a friend and she said they did something in Niverville along the same lines with great success. This won’t be exactly the same but similar.

    • Starting weights need to be in between Sept.1- Sept. 15, 2010, official starting date is Sept. 1 but we will allow people to join up to Sept. 15
    • Each participant will pay $20 (just over $1 per week).
    • Weigh in is every two weeks.
    • Runs for 17 weeks (Sept.1 – Dec. 29 – yes over Christmas!!)
    • Prizes will be given out to: (please note amounts depend on number of participants).
      • Biggest Loser (based on % of weight lost) 30-50% of fees collected
      • One person who loses at 5% or more (random draw from all who lose at least 5%) 10-20% of fees collected
      • One person who loses 8% or more (random draw from all who lose 8% or more) 10-20% of fees collected
      • The rest will be determined after the total number of participants are in. If there are enough people we will have teams and the remainder will go towards team prizes. Teams would be based on total weight all together with each team weighing about the same.
    • Weight lost is based on %, not by pounds lost. For example if you weighed 200lbs to start and lost 20 lbs your total percentage lost would be 10%. (starting weight/weight lost).

    HOW DOES A WEIGH IN WORK?

    • When you sign up you need to send me your starting weight (between Sept. 1-15)
    • Subsequent weigh-ins are:
      • September 22
      • October 6
      • October 20
      • November 3
      • November 17
      • December 1
      • December 15
      • December 29
    • Please use the same scale for each weigh-in.

    Your weight will NEVER be shared with others.

    • You will have to tell me your starting weight and report your weight every two weeks. I will keep it confidential. All stats shown on the blog will be in percentage form.
    • If we have teams you can choose to share your starting weight with your team members. Some may want to others may not, it is up to you.
